Plant Tacos

You can substitute sunflower seeds for the walnuts in this recipe if you have a nut allergy.

Ingredients
Walnut Mince
- 1cup Walnuts
- 400g can brown lentils, rinsed and drained
- 1cup Quinoa, cooked
- 1/2cup Sundried tomatoes
- 1/2cup Coriander, chopped
- 1tsp Paprika
- 1/2tsp Onion powder
- 1/2tsp Garlic powder
- 1/2tbsp Olive oil
- 2tbsp Tamari
Salsa
- 3medium Tomatoes
- 1cup Coriander, chopped
- 1/2small Red onion
- 1/2medium Lime, juiced
- 1small Garlic clove
- 1/4tsp Sea salt and pepper
Sides
- 1medium Avocado, sliced
- 2small Cos Lettuce bunches

Step 1
Walnut Mince • Blend all ingredients in a high-speed food processor until the mixture becomes a chunky ‘mince’. Heat ‘mince’ through using a frypan over medium heat. Transfer to a serving bowl and set aside.
Step 2
Salsa • Pulse all the ingredients together until roughly chopped. Pour into a serving bowl.
Step 3
Wash the cos lettuce leaves and serve with salsa, avocado slices and walnut mince.
If you have any leftovers store them in an airtight container for lunch the next day.
