Plant Tacos

Gluten free, Dairy free, Vegan.

You can substitute sunflower seeds for the walnuts in this recipe if you have a nut allergy.

Ingredients

Walnut Mince

  • 1cup Walnuts
  • 400g can brown lentils, rinsed and drained
  • 1cup Quinoa, cooked
  • 1/2cup Sundried tomatoes
  • 1/2cup Coriander, chopped
  • 1tsp Paprika
  • 1/2tsp Onion powder
  • 1/2tsp Garlic powder
  • 1/2tbsp Olive oil
  • 2tbsp Tamari

Salsa

  • 3medium Tomatoes
  • 1cup Coriander, chopped
  • 1/2small Red onion
  • 1/2medium Lime, juiced
  • 1small Garlic clove
  • 1/4tsp Sea salt and pepper

Sides

  • 1medium Avocado, sliced
  • 2small Cos Lettuce bunches

Step 1

Walnut Mince • Blend all ingredients in a high-speed food processor until the mixture becomes a chunky ‘mince’. Heat ‘mince’ through using a frypan over medium heat. Transfer to a serving bowl and set aside.

Step 2

Salsa • Pulse all the ingredients together until roughly chopped. Pour into a serving bowl.

Step 3

Wash the cos lettuce leaves and serve with salsa, avocado slices and walnut mince.

If you have any leftovers store them in an airtight container for lunch the next day.
